Healthy Mocha Brownies

Whether you need an afternoon treat or want to share baked goodies at the office, there's nothing like a gooey brownie to lift the spirits - and these one have an extra indulgent hit thanks to the addition of cold brew coffee!

Healthy Mocha Brownies Recipe: Veggie


2 free-range eggs (for a vegan alternative, replace with options like banana, flaxseed or egg replacer)
30g coconut flour
1 tsp baking powder
a pinch of sea salt
a pinch of cinnamon
42g raw cacao powder
125ml hulled tahini or almond butter
125ml maple or rice malt syrup
125ml Califia Farms XX Espresso Cold Brew Coffee
2 tbsp chia seeds
38g dark chocolate (70-85%), chopped


  • Preheat oven to 160C/320F/Gas 3. Line a baking tray with baking paper. Whisk the eggs in a large mixing bowl. Once whisked, add the coconut flour, baking powder, sea salt, cinnamon and raw cacao powder. Stir to combine. Add in the tahini, maple or rice malt syrup, Califia Farms XX Espresso Cold Brew Coffee and chia seeds, and mix everything together until combined. Stir through the chopped dark chocolate.
  • Spoon the mixture evenly into the lined baking tray. Bake in the oven for 25–30 minutes. To check if the brownie is cooked, insert a skewer. If it comes out clean, the brownie is ready.
  • Remove the tray from oven and allow to cool slightly. Cut the brownies into squares, and serve them warm with a dollop of Greek yoghurt or coconut ice cream.
