Ingredients:350g Quorn mince
6 tbsp hoi-sin sauce
1 tbsp vegetable oil
1 garlic clove, crushed
2 tbsp rice wine or dry sherry
1 red chilli, seeded and finely chopped
2 tbsp light soy sauce
100g mangetout, halved lengthways
6 spring onions, trimmed and sliced
2 blocks dried medium egg noodles
200g pak choi, chopped
- Cook the noodles according to the pack instructions. Drain the noodles and toss with the vegetable oil.
- Combine the Quorn mince, hoi sin sauce, garlic, rice wine and chilli, mixing well. Heat a wok or stir-fry pan, then add the Quorn mixture and stir-fry over a high heat for 2-3 minutes. Add the mange tout and half of the spring onions and stir-fry for a further minute.
