Chilean Spicy Apple Rice Salad
Ready in: 15 to 30 mins
Ingredients:100g long grain and wild rice
2 shallots, diced
1/2 sweet pointed Romano pepper, deseeded and very finely sliced
1 celery stick, finely diced
1 Pink Lady apple, cored and diced
1 tomato, deseeded and finely diced
2 tbsp chopped fresh coriander
1/2 tsp mild chilli powder
2 tsp chipotle paste
2 tbsp 0% fat Greek yoghurt
- Cook the rice according to pack instructions, drain, rinse in cold water and drain again.
- Put in a large bowl with all the remaining ingredients and gently mix until thoroughly combined. Check seasoning and serve.
