Creamy courgette lasagne

The white sauce topping features ricotta for added texture, as well as spring onions for zingy freshness. Using ready-made passata saves time, too, making this a great mid-week meal recipe. If you don’t have courgettes to hand, simply use any vegetables that are in season.

Aubergine and courgette lasagne

This rich pasta bake features juicy Mediterranean roast vegetables, including peppers, courgette and aubergine. After being roasted in the oven with tomatoes and garlic, they’re layered with pasta sheets.

Meanwhile, the easy passata recipe uses soy sauce for depth of flavour, while a pre-made vegetarian cheese sauce saves time. Serve with a fresh side salad drizzled in a simple vinaigrette.
