Vegetarian batch cooking recipes

Looking for vegetarian freezer meal ideas? When it comes to batch cooking for beginners, lasagne is a real winner. It’s also a great way to reduce food waste, as you can use up leftover seasonal vegetables, layer them with sheets of pasta in a roasted tomato sauce, bake and freeze. When you’re ready to enjoy authentic Italian food with the family, simply pop the lasagne into the oven and tuck in!

As one of the most popular Italian dishes, lasagne comes in various guises. Here are 10 of the best recipes, from gluten free lasagne, to dairy-free recipes that are perfect for vegan family meals.

Creamy courgette lasagne

Comfort food at its best – this hearty dish features layers of fried courgette and mushrooms in a basil and passata sauce. The white sauce topping features ricotta for added texture, as well as spring onions for zingy freshness. Using ready-made passata saves time, too, making this a great mid-week meal recipe. If you don’t have courgettes to hand, simply use any vegetables that are in season.

Aubergine and courgette lasagne

This rich pasta bake features juicy Mediterranean roast vegetables, including peppers, courgette and aubergine. After being roasted in the oven with tomatoes and garlic, they’re layered with pasta sheets.

Meanwhile, the easy passata recipe uses soy sauce for depth of flavour, while a pre-made vegetarian cheese sauce saves time. Serve with a fresh side salad drizzled in a simple vinaigrette.

Vegetarian lasagne al forno

Both meat eaters and vegetarians alike will love this veggie version of one of the most classic Italian recipes. Sautéed spinach, garlic, mushrooms and tomatoes make for a fragrant filling. Meanwhile, the easy white sauce consists of créme fraȋche and vegetarian Cheddar cheese for an easy yet satisfying dish.

Gluten free lasagne

The perfect way to use up late-summer veggies, this contemporary dish features slices of courgette in place of pasta sheets. It’s a bit more time-consuming as you’ll make each element from scratch, but it’s worth the effort. To make the dish entirely gluten free, simply replace the flour to create a gluten free bechamel sauce.

Mushroom and spinach lasagne

Porcini and chestnut mushrooms come together in this recipe, which doesn’t contain a tomato sauce. Instead, the white sauce features cottage cheese and vegetarian Cheddar and Parmesan cheeses for a bold punch of flavour.

Spinach and Philadelphia cheese lasagne

Cream cheese may not be a traditional ingredient, but it works surprisingly well in this creamy recipe. It’s easy to make, too! Begin by cooking a tomato sauce with onions, garlic, celery, carrots and tomato purée. While that’s reducing, make a white sauce with the Philly cheese, vegetarian Parmesan cheese and fresh mint.

The sauces are layered with spinach and pasta sheets, then baked in the oven until bubbling and golden. Serve with crusty garlic bread for a real winter warmer.

Mushroom lasagne with goat’s cheese

In this cheesy recipe, goat’s cheese wonderfully complements the earthy flavours of porcini, Portobello and chestnut mushrooms. Not short on flavour, the white sauce combines créme fraȋche and more goat’s cheese for an indulgent dish.

Red lentil lasagne

Earthy beetroot and a smoky vegan cheese sauce make this vegan Italian recipe truly special. There are several components, so it does require a bit of time, but the end result makes it worthwhile.

Grated beetroot combines with fennel for a unique flavour. The veg is combined with red lentils in a tomato, red wine and herb sauce that’s wonderfully rich. Everything is layered with vegan lasagne sheets, and topped with a homemade vegan lasagne sauce that really brings everything together.

BOSH’s classic vegan lasagne

BOSH duo Henry & Ian certainly know how to create satisfying comfort food, and this dish is no different. You can even make the vegetable ragu and bechamel sauce ahead of time, which is ideal if you’re meal planning.

The filling consists of a vegan ragu made from sun-dried tomatoes, carrots, celery, mushrooms and fresh herbs. The addition of miso paste, soy sauce and balsamic vinegar lends a rich, umami flavour.

The vegan bechamel sauce, meanwhile, is incredibly simple to make. By using nutritional yeast instead of cheese, this healthy white sauce recipe doesn’t compromise on flavour.

Dairy free lasagne

One of our favourite vegan Italian recipes, this dish is ideal for family dinners as it can easily be doubled. We particularly love this bake for its vegan white sauce recipe, which uses steamed, blended celeriac to give a creamy consistency.

The tomato and lentil sauce bulks out the filling, while the addition of herbs lends a fragrant flavour. Each element is then layered with lasagne sheets, baby spinach, tortilla chips and breadcrumbs, which add a welcome crunch.
