There's nothing quite like a good vanilla sponge, and this one is much easier to make than you would think. If you're feeling creative, try jazzing it up with a homemade icing, a lemon drizzle or make it into a Victoria sponge with jam and vegan cream.
                        
                    
                    2. Vegan Pavlova
I know what you're thinking: how could you possibly recreate pavlova without the eggs?! My gran thought the same thing, but the secret is all in chickpeas - yes, really! Aquafaba, the liquid from a can of chickpeas, is a vegan baker's secret weapon, and once you use it, you'll never look back! This delicious pavlova is perfect for a special occasion, particularly dinner parties and summer gatherings! Decorate with vegan cream (coconut whipped cream is my favourite) and your favourite seasonal fruits.
                        
                    
                    3. Banana & Blueberry Breakfast Muffins
Breakfast is my favourite meal of the day, but what's even better is having a breakfast-inspired goody for elevenses! These muffins are perfect for this, combining oats, bananas and blueberries in a moist morsel that's a naturally sweet treat.
                        
                    
                    4. Naughty Vegan Brownie
The American in me is quite obsessed with brownies, but vegan versions are often not as good. If you want a lovely gooey brownie then give this one a try - it has an extra indulgent twist thanks to the chunks of chocolate that will melt as the brownies bake - delicious!
                        
                    
                    5. Chocolate-Dipped Coconut Macaroons
I'm not the biggest fan of coconut... until it's turned into macaroons! I love these little morsels from Max la Manna, plus they use aquafaba in a way I hadn't considered before. Whip these beauties up for an afternoon pick-me-up served with a cuppa.
                        
                    
                    6. Vegan Chocolate Fudge Cupcakes
A cup of tea is always better with something sweet, and I love these fudgy cupcakes. They're made all the better by the cashew-based frosting blended with berries - yum!
                        
                    
                    7. Miguel Barclay's Vegan Sausage Rolls
Not all baked goodies have to be sweet! Greggs eat your heart out: these sausage rolls from the £1 chef, Miguel Barclay, feature a flaky pastry that encases a 'sausage' mixture made simply of mushrooms and black beans.
