Avocado and Artichoke Salad

This vegan salad makes a great packed lunch; just ensure you dress it just before serving

Avocado and Artichoke Salad Recipe: Veggie

Ingredients:

1 Waitrose Half Ciabatta
1/2 tsp of sumac
1 tbsp olive oil
2 avocados
1 cucumber
175g pack artichokes
1 lettuce
100g watercress
black olives

method:

  • Mix oil, sumac and ciabatta and bake for 10 mins in a medium oven.
  • Toss together the avocado, cucumber, artichokes with your favourite vinaigrette.
  • Place the lettuce and watercress in a large salad bowl and spoon over the avocado and artichoke mixture. Scatter over the olives and croutons and serve swiftly.
